Food and food items must be stored at least 6 inches off the floor for food protection and easy cleaning.

Sanitization of food contact surfaces - before use and after cleaning Hot water sanitzier reached 152 degrees F for plate surface temp. Hot water sanitizer must be maintained above 180 degrees F. Plate surface temperature if water is 180 degrees F should reach 160 degrees F plate surface temperature. Dishmachine repair service has been called and will arrive around 3:00pm today. Will use 3 compartment sink until dishmachine is working properly.
