Center food prep reach in cooler in center of kitchen next to fryer had an ambient air temperature of 45of. Inspector took temperatures on both sides of the unit 4 minutes apart from each other in time. Operator was advised to adjust temperature of cooler so that it maintained an ambient air temperature of at least 41of or below.
