Cooler appeared to be on defrost cycle and by end of inspection temperature went down to proper temperature. Corrected On Site.

Majority of foods on cooler non potentially hazardous. Potentially hazardous cheese held in cooler less than 4 hours and were placed on ice bath. Establishment must not store potentially hazardous foods in cooler longer than four hours until cooler is capable of maintaining foods at proper temperatures. Temperature log for cooler indicated ambient air temperature to be 35 degrees fahrenheit on 10-27-2010 at 9:30 am.
