Several pans of ribs, large containers of temperature hot bbq sauces and several rectangular pans of cooked rice are all cooling in walk-in from prep earlier in the day. All surrounding foods in walk in cooler are between 44degF and 48degF.]
  • Observed build-up of mold-like substance on surface of nonfood-contact surface. Fan covers in walk in cooler have heavy black spotting, easily wipeable from covers. Black debris appears to be blown/spreading onto ceiling of walk in cooler. Repeat Violation.
  • Critical - Observed equipment and utensils not washed, rinsed and sanitized in the correct order in three-compartment sink. [Observed dish washer washing pot in 3 compartment sink with soapy sanitizer mix in right bay, soiled water in center bay and left bay empty. Rinsing is done with sprayer nozzle. Soiled pots are stored behid establishment at mop sink before being brought in for washing/sanitizing.]
  • Critical - Observed food being cooled by nonapproved method. [Early cook crew is storing large volume of pre-cooked (before opening hours) meats, rice, sauce in walk in cooler. Several shelves are full of warm, cooling foods that are surrounding containers of food prepared on previous days. Ambient air temperature of walk in cooler is 53degF. Ambient air temperature of kitchen during inspection is 93degF. Repeat Violation.
  • Critical - Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit. Several cooked and raw meats, sauces, salads between 47degF and 57degF in walk in cooler. 4 Large pans of ribs and 3 large containers of heated bbq sauce in walk in cooler. Corrected On Site
