At about 30 minutes later, rice was observed at 98°F. Establishment was advised to leave food uncovered while in the first 2 hours of the cooling process.

  • Basic - Observed cold hold prep unit in kitchen not maintaining smbient air temp of 41° or below. Establishment's thermometer read 50°, inspector's thermometer read 52°. Food in unit was at correct temperature and chef said it had been pulled from walk-in cooler in the morning. He turned the temperature down on the unit and at the end of inspection ambient air temp in unit was 48°.
