  • Critical - Cold holding equipment incapable of maintaining potentially hazardous food at proper temperatures. Reach-in coolers next to the upright freezer, under flat grill, and reach-in cooler by small flat grill not maintaining temperature of potentially hazardous food at or below 41F.
  • Critical - Observed food (bread) stored on floor of the walk-in freezer.
  • Critical - Observed food (orange juice) stored in ice used for drinks - bar.
  • Observed gaskets with slimy/mold-like build-up - reach-in cooler gaskets on cooks line.
  • Critical - Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit. Sour cream in reach-in cooler by upright freezer on cooks line measured 51F. Products (chicken - 58F, beef - 56F, shrimp - 44F, etc.) in reach-in cooler under grill on cooks line. Products (sour cream - 55F, sausage - 56F, rice - 52F, etc.) in reach-in cooler by small flat grill. Product moved into walk-in cooler and ice bags placed on raw products to control temperature. Manager stated coolers are going into defrost cycle causing the temperature to rise.
